thanの後ろになぜsayがあるかわかりません。ここでのsayは、どのように訳せばよいのでしょうか?

翻訳ソフトを買ったので、試してみました。
参考になればいいんですけど・・・

1に関してですが、「言ってみれば」という意味合いでSay、ということがあります。

「たとえば」に近い言い方だと思います。

3は、「茶屋(の定義)とは、大量のお茶を販売する店から道端の休憩所までのAnything(何でも)を指し、芸者や似たような職の女性達が取引をした、旧遊郭に建てられた」
となるのではないでしょうか。(rest houseまでで一区切り)Anything from ~to… は「~から…まで全て(何でも)」と言う使い方をするときがあります。

2番については分かりませんが、sp-starさんの回答を見てちょっと思ったのは、
「美意識というものは日本では生活の一部であると言われるが、現在では(美意識が生活の一部からは消え去っているため)古来の生活様式のことを指す。」
という意味でまちがいないと思います。古きよき日本、って事を言いたいのだと思います。そういう意味ではThe aesthetic is a part of life in Japanという文が主節ではないでしょうか?

  文法が古いのか、文体が特殊なのか、省略が多く、句読点がおかしい英語のようにも思います。よく分からないのですが、強引に次のように考えることができます。

1. shibako74さんのおっしゃるとおり、ここのsayは「たとえば」の意味で使われています。

他にサクラとかモモとかいろいろ考えられる中で、とりあえずウメとフジで代表させた、という感じでしょう。

2. 前後関係がわからないのでなんとも言えませんが、最初のAsは「~なので」の意味では? now as in ancient timesは「現在も古代と同様に」。全体は「日本では美学が生活の一部であるために、現在でも古代と同様に、様式が生活そのものなのである」といったところでしょうか。ちょっとうまくつながっていませんが。

3. from ~ to ...「~から...まで」が両極端の例を挙げるために使われることがあるのはshibako74さんのご説明どおり。で、ときどきこれが、

 from A to B to C 「AからBやCにいたるまで」

のようにtoを2つ重ねて使われることがあります。ここはその用法のようです。「お茶の販売店から、休憩所や芸者遊びをする場所まで、何ものでもありえる」という感じでしょう。

  補足: なるほど、anything from A to B to C. という構文があるのですね。同じような店が出ていて気づかなかったのは迂闊でした。訂正訳:
 
  >茶屋(ティーハウス)とは、大量の茶を扱っていた商店[茶問屋]から、道ばたの休憩所[茶店]、また、芸者やそれに類した職業の女性達が商売に励む遊郭があった昔の娼館などであろう。

気になったので各文のポイント部分の用例を調べてみました。

いずれも新聞記事などの「生の」英語です。ご参考までに。

1. say「たとえば」の用例:

2. now as in ... の用例:
