色々応用してみましたが合っていますでしょうか？
教えてください。

one of the highest mountain
the second highest mountain
one of the second highest mountain
one of the second most beautiful mountain

でいいと思います。

・one of the highest mountain
同じ高さ（最も高い）の山がいくつかあって、その中の１つ
２番目じゃなくて１位タイって感じです

・one of the second highest mountain
・one of the second most beautiful mountain
こっちは２位タイですね

ちょっと追加。

"one of ..."ってことは複数あるわけ（あるはず）ですから
mountainsと複数形にしないといけませんね。

next to the highest mountain
だと「最も高い山の隣」って感じがします（自信ありませんが）。
