ここの個所で言っていることは、
アントシアニンは夜間視力に影響を与えるとは言えないだろう、ということでしょうか？

また、 apparently は「明らかに」に意味で用いるのはまれ、と辞書に書かれてあったのですが、この英文でも「明らかに」の意味ではないのでしょうか？

　「だがしかし、健康な被験者でテストしてみたところでは、アントシアニンを摂取するこが人の夜間視力に顕著な違いを生じさせることはないようだ」

　subject は 「被験者」 のこと。It's just that ... という表現については、ネット上にいくつも解説されているものが見られるので、説明は省きます。

　この文におる apparently は、「テストの結果を見る限りは」 という意味合いを持たせるために置かれているとも見れなくはないですが、「効果があるということを 明確に 示すような結果は出ていない」 というニュアンスのようにも思えます。
