「万が一」の意味です。　英和では、[if節で]とか書かれていると思います。　この文でifがないのは、こういう訳です。

should you 　～～～ ＝ if you should　～～～

こういうのをifの省略といいます。

どこから、「引き受ける」が来たのかと思って英和を引いてみたら、動詞だと思ったのですね。

泣く時→抱きついた状態で誰かの肩の上に頭をのせて泣く

というイメージがあります。

この詩では、初めの方で

と抱きしめながら相手の話を聞く様子ですし、この I'll be the shoulderは、

「あなたが泣く時にあなたの頭をのせる肩に、僕がなるよ。」→「泣く時は僕の肩をかすよ。」

まず、a lump in somebody's throatが熟語で、「泣きたい気持ち」という意味です。
