"had not ～"は、"if ～ not～" ということです。

これだけで、多分お分かりになってしまいそうですね。

「もし、運命やら、複雑な税金問題やら、単純な思い直しがからんでこなかったら、（ジョーズの）映画の見出しはそうなっていたかもしれない。」ということです。

当初計画されたキャスティングが、ひょんなことから変わったんですね。
