発症を抑えるなどの表現は　reduce the chances of developing などを使うのが一般的です。intake をどうして使っているようですが、私の辞書には名詞と定義されています。
In Japan, chances of having heart disease is extremely restrained by Japanese food culture because it has a lot of intake of fishery produts and vegetables.（it = Japanese food culture)
もしくは
Japanse food culture of eating fishery products and vegetables can drastically reduce the chances of having/developing a heart disease.

簡単な英語を使って訳してみました。

Japanese people take a lot of fish and vegetables and the food culture prevents heart diseases very much.

However, they take a lot of salt and it is a cause of cerebrovascular disorders.

Now that we can cure high blood pressure, which is a most common cause of cerebrovascular disorders, the death rate has been successfully reduced.

In the American and European countries, they take a lot of meat. The high cholesterol diet increases the incidence of heart diseases.

As a result, Japan enjoys the greatest longevity of developed nations.

developing a heart disease --> developing heart disease 冠詞不要。
欧米諸国の言い方は
In US, Canada, and European countries や In north America and Europe などがいいでしょう。
