学年度の間、ローズはキャンパスアイコン（アイドル的存在）となり、どこへ行こうと友達を簡単に作った。

彼女は着飾るの（おしゃれ）が好きで、他の生徒達からの彼女に注がれる注目を楽しんだ。

She was living it up.
Live it upで贅沢に暮らすや、大いに楽しむという熟語です。
彼女は大いに楽しんでいた。

At the end of the semester we invited Rose to speak at our football banquet.
学期の最後に、私達はスピーチをしてもらうため、Roseをフットボールの夕食会に招いた。

She loved to dress up and she enjoyed the attention bestowed upon her from the other students.
→おしゃれ好きな彼女は他の学生たちから注がれる憧憬の眼をおおいに楽しんだのだった。


She was living it up.
→彼女周囲の憧れに応える生き方をした。

live up to ～　というのは【期待に沿う】という語感が特徴です。褒められたらそれに応えて勉強するような状況に使われます。

At the end of the semester we invited Rose to speak at our football banquet.
→期末になると私たちはフットボールのバンケット（食べて踊る集い）でローズに演説をしてもらうように頼んだ。

No2のものです、No1の方の訳の方が日本語らしい感じでいいと思います。

最後の文章もおかしいなと最初は思いましたが、文章の流れからNo1の方の訳でいいと思います。
