出席している生徒たち

というのは、the students present でいいのでしょうか？　あるいは、他にもっと別の言い方はありますか？ the present students はもちろんだめですよね？

1. (the) students present

→このように後置とすることで、出席している生徒・学生の意味になります。
　もちろん、the present studentsはダメです。

2. 出席をとるときの返事が、Present. (= I'm present.）または Here. (= I'm here).ですね。ということで、このhereを使っても出席している生徒達の意味を出すことは可能です。
The students here know about the new assignment due next Monday.
このようにhereを使えば、出席しているーーという意味になり得ます。

3. 関係詞などを使っても表現できます。
The students who are present know about the new assignment.
The students who are here today know about the new assignment.
のように言うことができます。

4. あとは、場合によっては、show up, come, attend, appearなどを使っても近い意味を出せることがあります。
The students who have showed up know about the new assignment.
who come, who have attended, who appearedなどでも可。

以上の4通りがあると思います。

The students present ぐらいしかありません。

ご指摘の通　The present studentsでは現在の学生となってしまいます。The students attending とも言えないことはありませんが、students presentのほうが普通と思います。これもpresentと同様 attending studentsとすると別の意味になってしまいます。

なんだかややこしいですね。ちょっと調べてみたら、
presentee と absentee はまったく違った意味になるんですね。
presentee は、贈り物を受けた人、absentee は欠席者
出席しているという意味の present は限定用法はできないのに、absent はできるようです。

しかし、出席しているという意味では、限定用法ではなく、叙述用法でのみ使われるのではないでしょうか？
present company, group などということはあるようですが。

で十分足りています。

the students (who were) present
the students (who were) attended

も勿論大丈夫です。
