・play the piano ピアノを弾く（何を弾くかは問題ではない）

・play (a music piece) on th piano ピアノで（ある楽曲を）弾く
・play around on the piano ピアノを弾きまくる、ピアノを弾いて楽しむ

The first two are the same
The third sounds like the person playing the piano isn't as serious as The first two.

He is playing around on the piano.
He is playing on the piano.
The second one sounds a little more serious.

'Playing around' is just having fun.
