(1) 時制の一致で are / use を過去形にする、というのではないでしょうね。

are / use は事実として現在形になっていて、did not know という過去に一致しなくてもいいです。
such many → so many だと思います。

(2) 強調構文で when → that
ではないでしょうね。これも when が使えます。

11:30 in night → at 11:30 at night, at 11:30 a.m. でしょうか。

すみません、at night p.m. でした。

これは強調構文であり、
ただ先行詞になっているというのではないので、
at 11:30 にする必要があります。
