"it has"が挿入されているからわかりにくくなっていますが、

it takes its name from the special way of undulating across loose sand.

とすれば、もう少しすっきりするでしょう。"it has"も当然wayに掛かってきます。

　it has the[its] way of undulating across loose sand の way を先行詞として前に出したもので，way の後に関係代名詞 that[which] を補うことができます。

　have the[one's] way of ～ing で，「～する独自の方法を持っている」という意味になります。way は to 不定詞，of ～ing いずれでも修飾できますが，way to live「生きていく方法，生きるべき方法」なのに対し，way of living「実際に生きる方法→暮らし方，生活様式」のような違いが出てきます。
　「そのネーミングは，それが粗砂を波のように動く特有の方法からきている」という意味です。
