★この「something is ・・・of hinges」は具体的にはどのような意味なのでしょうか。

「just maybe for that of our neighbors」は「for our personal entertainment」との対比だろうという気はしているのですが・・・。

しかし、この理論には痛いほど明らかな穴（欠陥）がひとつある。もし完璧なものには決して「ちょうつがい」がついていないとするなら、完璧なちょうつがいはどんな格好をしているというのだろう？

何かが完璧であるのは、ちょうつがいがないときだけだ
（＝完璧なものには、ちょうつがいはない）

“on some level too deep for me to fathom”で「私には理解できないくらい深いレベルで」ですね。
夢の話ですから、「私には理解できないけど、心理学者が私の深層心理の奥深くを分析すれば、ひょっとしたら、つじつまが合う説明ができるのかもしれない」というようなニュアンスだと思います。

主として、個人的な楽しみのために

just maybe for that of our neighbors
ひょっとしたら、隣の人の個人的楽しみのために
(この前の部分で、誰か自分ではない人が見るはずだった夢を、代わりに自分が見た話が出ていますから、それを受けているのだと思います。確かに、隣人の夢を覗き見するのは楽しいでしょうが、自分の夢を覗き見されると思うと、perish the thought!と言いたくなりますね)

analysis
これは、普通に「分析」でよいと思います。
夢に出てきた人や物を分析して「自分の夢じゃない」と考えたり、夢で聞いた意味が通らない言葉の意味を探ったりすることを言っていると思います。
