出題の意図が分かりかねる部分もありますが、１についてはthe assortment が大小どちらも指しているとしか読めないので、

1. Thirty percent of customers bought a jar of jam after seeing the small assortment, and only six percent of customers bought a jar of jam after seeing the large assortment.

2. Only six percent of customers bought a jar of jam after seeing the large assortment.

という答えになろうかと思います。

さすらいの桃太郎さんの2番はsixではなくthreeでは？
