１）I see it as, as the major labels die and fall off – I don’t think it’s ever gonna return to how it used to be – but in the olden days, being a live musician was important and playing live was important, and recording was less privileged.

I see the live as it's gonna never return to how it used to be.
文中のitは全て "the live"
メジャーの名が廃るがごとく　とでも挿入句を理解すればよい。

２）いつの間にか何処かで2つの違いができちゃった・・・between　AとBに

５）昔と違い、ライブの様にレコーデングもその場面ごとを肌に感じるように(時間を）区切りながら製作する。というような意味合い。
