the joyful, lively song と同格的に

「その楽しくて快活な歌 "I wish ..."」
「その楽しくて快活な "I wish ..." という歌」

joyful, lively はコンマでつながれ、ともに song を修飾しています。
そして、この the ～という長い名詞のかたまりが sing(ing) の目的語となります。

sing O in chorus「O をコーラスで歌う」なわけですが、
O が長いので後に回っています。

こういうのはためしに
sing the ...... in chorus
としてみると、in chorus の役割がわからなくなるので
動詞に近づけています。

日本語ではそのまま
コーラスで、～という歌を（歌う）
と読んでいけば意味が感じられます。

歌の歌詞を、ここでは「歌のタイトル」のように使っているのでしょう。

「" ～ " という歌」という位置づけで。

Children were singing the song (that had the word as) "I Wish You a Merry Christmas and a Happy New Year."

Children were singing the song (titled) "A Merry Christmas."
