On the day that Koppel took possession of Martinique, he stopped talking Yiddish. No one will ever know why he stopped talking Yiddish, or how he expected to get along on a vocabulary of about one hundred and fifty words of broken English; but he saw it through to the bitter end. My mother tried to trap him many times into using a Yiddish word, but he never fell for the bait. Not only did he stop talking Yiddish, but he no longer “understood” it.

make it「うまくやる」とか

fight it out「最後まで戦い抜く」
と同じように、この it は状況の it のようなもので、
そのときの状況を表していて、特に何か具体的なものではありません。
ここではあえて言えば「Yiddish を話さないこと」

see it through で「仕事などを最後までやり通す」
to the bitter end で「最後まで」とさらに強調されます。
とことん、最後まで意志を貫いた、くらいの意味です。

彼は最後の最後まで見透した。　it=Martinique 　　Martiniqueの未来を最後の最後まで見透かしていた。
