という文がありました。これって、
He not only coaches とするのが正しいとおもうのですが、どうなんですか？

encourages と s がついていますから、(B)の解釈になると思うのですが、それなら、He not only coaches とするのがいいように思うのですが。
→賛成します。
しかし、encourages があるため、この場合、
He coaches not only ...
but ( he ) encourages them ..　が対になるのも可能と言えば可能ですね。

He not only wants to be friends with her, but wants her to kiss him.
He wants not only to be friends with her, but wants her to kiss him.
このぐらいの許容度はあると思います。両方同じということで。

(A) He coaches not only ... but ... の場合

He coaches
.....not only ....to make his kids good players
.....but............(to) encourage them ....................to think about their futures 　
(→encouragesのsは不要, themの後にtoが必要）
......................................................... and not ......to give up on their dreams.
という構造です。to encourageのtoがないのがひっかかりますが、
これは英語として、指摘した箇所を直せばよろしいと思います。

(B) He not only coachesとする場合
He
.........not only coaches to make his kids good players
.........but........encourages them..................to think about their futures
..................................................and.....not to give us on their dreams.
となります。こちらもthemの後にtoが必要です。これも意味が通ると思います。

指摘した箇所を直せば、両方ありだと思います。
