the onlyという限定先行詞に対してはthat

He has two sons,(who) go to primary school

He gave up smoking, (which) delighted his wife.
俗に非制限用法と称されるもの。

以前は，only とか最上級がついたら that が好まれる

というのが学校文法の頻出問題でしたが，実際にはそれらがついてても
人間であれば who がよく使われます。

ただ，今回はその人間を animal の一種として説明していますので
who は使いにくく，that が正解です。

sons は人間だから who です。

He gave up smoking という内容を受ける，
コンマ which です。
彼が煙草をやめて，そのことが妻を喜ばせた。

コンマつきの継続用法（非制限用法）では that は使えません。
that を「それ」とするなら，前に接続詞 and が必要。
