アメリカ独立宣言の有名な文章ですが、
We hold these truths to be self-evident, that all men created equal, that they are endowed by their Creator with certain unalienable Rights, that among these are Life, Liberty and the pursuit of Happiness.

で最後のthatは前のRightsを指す関係代名詞で、that are Life, Liberty and the pursuit of Happiness
の意味になると思うのですが、間にある、among theseは何を言っているのでしょうか？

文の構造は次のようになっています。

[①We hold these truths to be self-evident] , [②that all men created equal], [③that they are endowed by their Creator with certain unalienable Rights,] [④that among these are Life, Liberty and the pursuit of Happiness.]

②③④全ての最初にある that は①にある truths (真実、事実）を言い換えている、同格を示す that で、いわゆる名詞節を作っています。

④の文は倒置になっていて、普通の語順に書き直せば
　that Life, Liberty and the pursuit of Happiness are among these. です。
these は③の unalienable Rights を指しています。　④を直訳すれば『生命、自由、および幸福の追求はこれら（不可侵の権利 unalienable Rights) のなかにあること』のようになります。ですから④の that は関係代名詞ではありません。
