「歯医者に今週以内の予約をする」はなんといいますか？
「今週以内に」ではなく、「今週以内の」というところが肝です。

make a dentist appointment for this week

(1) make an appointment this week (予約を今週に行う)
(2) make an appointment sometime this week (これは「今週のうちのいずれかのときに」ということだから、結果的に上とだいたい同じ意味になると思います)
(3) make an appointment in this week (標準英語では、こういう表現はしないのではないかと思います)
(4) make an appointment for this week (これで、初めて「今週の予約（今週に治療をしてもらうための予約）をする」つまり「今週以内の予約をする」という意味になると思います。）
(5) make an appointment for sometime this week (これも上とだいたい同じような意味になります)

「歯医者に今週以内の予約をする」は下の①のように言うのが普通です。

for within this week と言えないことはありませんが、for this week でも同じことですからこの文脈で for within this week とすることはまずありません。
「以内の」に似た感じを出したいのであれば for anytime in this week とすることもできます。

①　I 'll make a appointment with my dentist for this week.

なおご参考までに for within ~ は次のような文脈なら使えます。例えばコロナワクチンの予約は１ヶ月や２ヶ月も前からの予約は取らなくて一週間前からの予約しか受付しない場合、②のような言い方はできます。

②　Appointments can be only made for within the week.

これだと、今日が日曜でも、水曜でも、今週中の予約という意味になります。
