whichの先行詞はmaterial。

You manufacture knowledge out of material.
あなたは材料から知識を作り出す。

という元の文を考えて、それが変形された文。訳は

この文は manufacture を先行詞にして which で繋いだ格好です。out of をwhich の前に出すのは一般の前置詞同様です。
