もう秋ですから、確かに「春から～になる」だと来年です。

つまり「春に」と同じことでしょう。なので、
I'll be a nursing student next spring.
で十分ではないですか。

今は秋で、「春から～になる」という未来のことを言うとき、next spring でも this spring でも構いません。

その根拠は至るところで見つかりますが、少しだけここに示します。

(1) "I will go there this Saturday." This cannot mean a Saturday in the past. It is the closest one ("this") in the future.
