代名詞one(人々一般を指す使い方)が、日常会話ではかなりレアなのは高尚な言い方だかららしいのですが、その理由を教えて下さい。

本当のところはよくわかりませんが、one には人と同時に犬などのものも指し、どちらかというと後者の使い方が一般的で、人に使うと、使い方によっては混同する、それなら、he とか the person とか使えばいい、ということになるのかもしれません。

one そのものに高尚の意味あいがあるとは思えません。

日常会話の中でもたとえばこんな言い方をすることもあるでしょうけれど、こんな場合では "one" はただ奴(やつ)とか者といった漠然とした、あるいは無くても通じる程度の代名詞、別段高尚な言い方でもないと思います。
でも、そう言われてみれば、たとえば映画「フィールド オヴ ドリームズ(邦訳)」のシナリオの中に、"someone" は見かけるものの、ご質問の人々一般を指す "one" は一度も見かけませんでした。お答えになっていませんね、ごめんなさい。
