意味は簡単にとれそうですが、この文って、述語動詞は doubled しかあり得ないですよね。
述語動詞の前に more than をつけるのってありなのですか。
それとも double にだけ起きることなのですか。

more than doubled, more than tripled などについては、ネット上の英英辞典では次のように書いてあります。

more than double/triple etc (=become over twice, three times etc as large):
During the past five years, the number of traffic accidents has more than doubled.

この英文の動詞は貴方のご理解通り doubled です。more than はここでは副詞的にdoubled にかかり直訳調で「２倍になった以上だ」であり、普通の日本語に直せば「２倍以上になった」です。

more than（以上）という意味なので、続く動詞は数量に関係した double (2倍になる）や tripple（3倍になる）のような動詞の他、例えば offset (相殺する）という動詞もしばしば一緒に使われます。

The profit of new products more than offset the total accumulated loss of the company. 「新製品の利益はその会社の蓄積した総損失を相殺した以上だ。（利益は損失を補うに有り余った。）」

次のような数量に関係ないことでも使えます。

His attitude more than disappointed his father. It saddened him.
「彼の態度は父親を落胆させた以上だ。それは父を悲しませた。」

more than doubled --- 2倍以上になった、という意味です。

[Something] more than [動詞].
という構文は、普通の動詞には使えないと思います。たとえば
(*)She more than cried.
(*)He more than laughed.
とは言いません。しかし
The population more than tripled (quadrupled, etc.)
という形で、3倍（4倍）になった、という言い回しはよく使われます。
