比較級のthat ofで

×The population of China is bigger than Japan.
○The population of China is bigger than that of Japan.

というのは有名ですが、では

Indian philosophy is more complicated than Greek philosophy.

で2個目のphilosophyの繰り返しを避けるためにはどういえばいいでしょうか？
可算名詞だったらone/onesが使えると思うのですが、不可算には使えないのですよね。

that of ～は可算でも不可算でも用いられます。
問題は Greek という「ギリシャの」のような形容詞を
that of Greek のような表現で出せるかどうか。

of の後は名詞ですので Greek で「ギリシャ語」とするのか。
Hindi はあっても Indian なる言語はないが，それで比較できるか。
あるいは that of Greece なのか。
Greece's なのか。

red wine と white wine のパターンは有名ですが，
色は英語では「色詞」とでもいうべき特殊なものなので，
red wine に対して，white という名詞ですますことができます。

ということで，Greek philosophy とそのまま残すのがベターかと。
wine の場合も wine を繰り返してもいいです。

両方可能ですが、Greekと止めると、一瞬ギリシャ語の意味などもあり、戸惑う可能性がありますので、最初のthan that of Greekをおすすめします。

** つまり形容詞でとめるということです。

したがって、本題のままでもよろしいですが、"Greek"でとめてもいいということです。
