でしたら、仰るとおり「他の国の人と食事をする」ですが
...with people in other countries?
ですと、「他の国『で』人と食事をする」になります。

まあ、答えは大して変わらないでしょうけど:p
a difficult questionで良いと思いますよ

...a difficult question because of the different tastes or culture we may have.
とかですかね。

という意味ですね。

文化や好みがちがうので難しいと思います。

(1)I think it is difficult because their culture and taste(in food)　are different from us.　

(2)I think it is hard because of our differences in culture and
　taste.

(1)、(2)はどちらでもよいと思います。
