分詞構文的ですが、それは telling についてではありません。

fortune-telling
fortunetelling で「占い」という名詞であり、
a means of につながっています。

分詞構文は
Being a means of ..., sumo ～
「～の手段であり、相撲は～」
と sumo という主語についうて成り立っています。
