上の文は、

Is Bill Gates a man (whose) (eyes) are green?
で間違いないと思います。

下はちょっと自信がありませんけど、
This is (everything) (that) I know about him.
辺りがしっくりくるかと思います。

歴史が長かった場所で京都が美しい年だったっておかしいだろ。

関係代名詞だから、whoseです。

美しい京都の歴史が長かったんだよ。

従属節に対して、thereならwhere 、thenならwhen です。

Monday is the dayだから、関係代名詞のwhichです。
