itは単数だけでなく、２つの名詞を受けることもありますか？

この例文で computer と information technology を it で受けているのは関係の深い computer と information technology 一体の物としてみなしているからです。他の例としては (machine's) operation and maintenance 「(機械の）運転とメンテ」 が一体の物とみなされしばしば単数として扱われます。

ご質問の tennis と soccer はどちらも球技スポーツなので一体と見なせないこともないことはありませんが、あまり真剣に考えることはないと思います。It's fun でも They're fun でもどちらでも良いです。

tennis も soccer もそれぞれ不可算名詞ですが、この例のように不可算名詞が2つ以上あればそれを受ける代名詞は複数を表すthey で受けるるのが原則です。

ただ英語でも「何が」を言わず、単に「楽しいよ」だけを言う事がありますが、その場合でも fun だけではなく普通 It's fun のように It's をつけます。

なのですが、この場合はitはthe new computer and information technologyということです。

computerはCで、technologyはU　という扱いの名詞だと
思いますがこの場合は文脈把握ということでしょうか？
