この前、アメリカ人に大阪の名物を聞かれて「たこ焼き」を説明するのに苦労しました。おにぎり＝rice ball みたいに簡単に伝わる言い方はありますでしょうか？

相手が聞いたことがないなら一言では伝わらないでしょう。

簡単に説明する必要があると思います。

私なら次のように言うかも。

Tako yaki or octopus ball is a kind of small pan cake containing pieces of octopus meat in it. The origin of octopus ball is found in Kansai area of Japan.
It's shaped like a ball so we call it an octopus ball.
Octopus ball is really popular in Japan, especially in Osaka. Almost every family has dedicated frying pans for octopus ball in their houses so that they can enjoy cooking it by themselves on their dining tables while they are chatting and eating it.

辞書ではoctopus flittersと書いてありますが、あまりピンとこない感じがしますね。

flitterはfritterでもあり、えび天みたいな感じですよね。

納得してもらえるかは分かりませんが、「fried octopus dumplings」てな感じになります。

friedじゃなくてgrilledでも良いですけど。
意味は「タコ入り揚げ（焼き）肉団子」です。

…というか作り方を教えた上で「TAKOYAKI」で良いんじゃないですかね。
