ご質問の日本文が少し抽象的なので、前後や背景でいろいろ言い回しがありそうです。

とかもっと具体的に素材の味とか香りにこだわるというのであれば
The cook has strong oreferences for certain tastes and flavors.
なんて言い方も出来ます。
