両手なら thumbs and fingers, 足の指なら toes 手も足も含めて「全部の指」を一番簡単に言うには digits です。

the をつけて特定の指について言及する場合 all of the ~ でも all the ~ でもどちらでもいいと思います。強いて言えば all of the ~ のほうが固いと言うかフォーマルな表現。
