ご質問で挙げられた文は 全部受動態ですね。

受動態は 英語では doer(最初の文なら 契約をキャンセルする人）が不特定で、直接目的語がある時に よく用いられます。
つまり、最初の文で 誰が契約をするかは 重要ではないわけです。
そからで、canなどの助動詞が入ると少し不自然に感じることがあるかもしれません。

蛇足ですが、フランス語だと こういう時には onという便利な代名詞を使って 能動態で
最初の文なら
"On peut annuler le contrat dans trois jours ouvrables.”
って出来るんですが、英語で 能動態にするには どうしても
you、they、we、peopleなどを主語に立てなければなりませんが、これを回避するための受動態の用法です。

受動態なので、動作対象が主語になります。

対象は「もの」である場合が多いため、そのような印象を持たれるのだと思いますし、「自然」な感じはします。人が主語である場合、by ○○ は省略され過去分詞は形容詞的に用いられまますから、受動態とは感じられない気がします。
