cabin attendant は和製英語なんですけど。

まぁ、日本人の英語は日本人にさえ理解できればよしという考え方なのかな。

felt it again でも通じなくはないと思いますが、renewed を使うと良いと思います。

"I have a renewed sense of appreciation for cabin attendants by looking at them working really hard."

"I have a renewed understanding of how difficult being a cabin attendant is by watching them work really hard."

I realized (again) that the cabin attendants' jobs were really hard as I watched them taking care of passengers.

私は客室乗務員さんたちが乗客たちのお世話をするのを見て、彼らの仕事は大変だなと(改めて）認識しました。
このAgainはなくてもいいと思います。

以下のようにすると意味は通じます。

あまりいい英語ではないので,以下でどうでしょうか。
Seeing the cabin attendants work, I found again that their job was really hard.

I realized again that the work of the cabin attendant is really hard to see their way to work.

felt→realized busy→hard の方がニュアンスに合うかと。「見る」といえば①「look」②「see」③「watch」他ありますが、①「目を向ける」②「(あまり意識的にでなく)目に入る」③「(目を動かさず)よく見る」というニュアンスの違いがあります。ですから今回の感じでは②か③が合うと思われます。
　客として乗ってなんとなく偶然CAの大変さを目撃したのか、何らかの理由で興味をもって意識的にその仕事ぶりを観察していたのか、その辺りの違いで②か③か決まってくるでしょう。①は前記の理由で例えば先生が生徒に「黒板を見て」等と視線を何かに向ける場合に使います。「黒板のこの図形をよーく見てごらん」なら③。「黒板にハエがとまってるのが見える？」なら②ですね。
