お考えの通りでよいと思います。
... begin your harvest, and (begin) your ploughing when ...
本当は後ろの begin も入れたいところですが、直前で使っているので省略しています。

(b)

ご指摘のとおり、前後２つの文に分れます。
前半は
　When the Pleiades are rising ... , begin your harvest
　（プレイアデスが天空に見られるようになったら、収穫の準備を始めなさい）
後半は
　(begin) our ploughing when they are going to set
　（プレイアデスが天空から消え去る時期になったら耕作し始めなさい）

また、ploughing が動名詞であること、ご指摘の通りであると思います。

しかし、収穫の時期が5月で、耕作を始めるのが11月であるとは、日本での感覚とはずいぶんと違うものですね。気候が違うせいでしょうけれど。


(a) wish to get in all Demeter's fruits

私は get in がひとつのまとまりだと読みました（こういうのを句動詞というそうです）。
辞書を見ると「（作物など）を収穫する」とあります。
直訳すると「すべての（all）デーメーテールの果実を 収穫し（get in）たいと願う（wish）」となると思います。

(b) fruits

これは鋭い着目ですね。

　In Greek the various kinds of grain are called Demeter's fruits.
　（ギリシャでは、様々な種類の穀物のことをデーメーテールの果実という）
