文語調ですね。

The days are short and the nights are long. でもかまいませんが、
The days are short and the nights long. のほうがカッコつけています。
The days are short. と The nights are long. が対照的な文になっているので、
are を省略しても判るでしょ？ということです。

The days are short and the nights are long.　みたいに書くと幼稚な表現だとみなされます。

The days are short and the nights are long. がparallel structureになっているがためにand以降の不必要な繰り返し部分(are)を省略してる。

この省略は文語体ではformalとみなされ貴方が書いた文を先生に提出すれば質問文のように添削される（2番目のareは消される）

冗長になるので、The days are short と来たら、続いて同じ表現をするのにthe nights long でいいんです。

英語は英語のセンスで覚えなければ上達しません。

あなたの推測通りでareを抜かしてしまっただけだと私も思います。
