以下の文章の中のone could make the case がわかりません。どういう意味でしょうか？　この場合のoneは何ですか？（人？）　make the caseもわかりません。　（アメリカのレストランにおけるserverの定義について語っている文章で、they は寿司職人のことです。寿司を握ってはカウンター客に直接出す寿司職人もserverと言えるのではないか、といったような内容です。）

one はおっしゃるように、「人一般」です。

今風なら you にすればいいです。

この case は「主張」の意味で、
make the case (that) SV で「～だと主張する」くらいです。
make one's case と覚えることも多い表現です。
