【such that構文（～のような～）のsuchとthatが果たす役割は？】

If there is a triangle such that two of its angles are 60°, the triangle is an equilateral triangle.
もし2つの角が60度であるような三角形があるならば，その三角形は正三角形である.

このような訳例が辞書に載っていました。

この、such と thatの品詞はそれぞれ何で、どのように関わり合ってこのような意味を成しているのでしょうか？

の two of its angles are 60°はこれで、完結の文章のようなので、　such 、thatは先行詞のようには思えない。。。

such は「それほどの」という意味合いの形容詞、that は接続詞です。

熟語ですから例文で納得して下さい。 such と that は分離した用法がありますので、He is such a coward that he rarely takes a risk. のような文例から入るのが良いかも知れません。
such と that を分ちがたい文例も多数あります：a guest whose manners and ways are such that a host would be happy to have the guest
