I had not even known (that) it (= the learning) existed.

の2つの文になります。

「彼女は、私が、存在していることさえ知らなかった学問の扉を開いてくれた。」

This is the book which you said he is reading.

This is the book.
You said (that) he is reading it (= the book).

「これは、あなたが、彼が読んでいると言った、本です。」

少し違うと思います。この文だと「あなたは、これが、彼が読んでいる本だといいました。」

になります。

連鎖関係詞節というのは

a person who is honest
a person ＋ He(the person) is honest.
「正直な人」
に対して
a person ＋ I think he(the person) is honest.
a person who I think is honest
「人」を「私は彼が正直だと思う」で説明して
「私が正直だと思う人」とするものです。

上の英語に対して I think が挿入されているという説明がよくなされます。
（私は挿入ではこの構造の根幹が理解できないと思っていますが）

すなわち，先行詞である a person が
I think (that) 文.
のような that 節中の主語や目的語と等しくなるものです。

この he は think の目的語そのものではなく，
文全体の主語でもなく，that 節という think の目的語の中にある
部分的な文の主語です。

She opened a door to learning that I had not even known existed.
であれば
She opened a door to learning.
＋
I had not known it(the door) existed.
「私が存在するというのを知らなかった扉」

逆に２文をつなげる時には it を which か that に置き換えて

一応，日本語で理解できると思いますが，
これは「扉を知っている」とつながるのではなく，
「扉が存在するということをしらない」とつながっています。

日本語では自然にわかりますが，英語ではしっかりと構造を理解しないとわかりません。

the book ＋ You said he is reading it(the book).

you said this is the book which he is reading
だと，
