ビジネスとしてしてれられるのでしたら、we を主語にして、ビジネス的に書いてください。

Hello Cathy,

We are sorry to inform you that we are completely out of stock on A and B. However, we do have other items in stock, which will be shipped immediately.

As for A and B, we should be able to get them to you by the first week of March.
Again, sorry for the delay.

Hi Cathy,

I hate to say this, but we are out of A and B. Except these two, we have the items in stock and they will be shipped immediately.

For A and B we can ship so that they are in your hands by March. I am sorry about this delay.
